TAMALES PASTA SAUCE

A fairly unique sauce that has a delicious umami flavor and a texture with a great flair to it.

Ingredients:

  • 1 cup cooked Tamales
  • 1 cup stock
  • 1 tbsp butter
  • 1 1/2 tbsp olive oil
  • Juice of one lemon
  • 2 cloves garlic
  • Salt and pepper to taste
  • Pepper to taste
  • Additional water if needed.

Directions:

  • Dice your garlic as small as you can.
  • In a medium sauce pan combine all of your ingredients except for your stock. Cook this on medium heat for roughly five minutes, stirring often. You will be able to tell its ready when you can smell the garlic and the corn caramelizing. Don't let it go too far as over cooked garlic becomes bitter.
  • Add in your stock, while still cooking, slowly maybe 1/4 a cup at a time and stir ensuring all the liquid has been mixed in before adding the next 1/4 cup.
  • Once all your liquid has been incorporated remove from the heat and let your sauce cool for about 5 minutes. This will help you determine if you need to add any additional water to get it to the thickness you would like. You can also use this time to adjust the salt and pepper to your liking. Add your water in small amounts, maybe 1-2 tbsp at a time.
  • Serve and enjoy.
