ryu spicy cauliflower

Ingredients:

  • 1 large head of cauliflower, 2 if they are smaller.
  • 1 cup cashews
  • 2 cups water
  • 2 cloves garlic
  • 1/2 onion
  • 1 tsp crushed red pepper
  • 1/4 tsp chilli powder
  • 1/4 tsp cayenne
  • 2 large red peppers
  • salt to taste
  • 2 tbsp olive oil

Directions:

  • Preheat your oven to 375 degrees.
  • Clean off your cauliflower making sure to cut off the rough stem if still attached. Place this in an oven safe bowl or small dish, you don't want it in anything too big or it wont cook within the sauce.
  • In a blender or food processor place your cashews, water, garlic, onion, red pepper, cayenne, chili pepper, olive oil, and salt. Blend this on high until you have a creamy sauce, it should resemble something like a cheese sauce. Stop and scrap down the sides as needed. When finished give it a final taste and add salt if needed.
  • Pour the sauce over top of your cauliflower and try and coat it as best as you can. It will pool at the bottom which is okay.
  • Cut your two red peppers into thin strips, they don't need to be perfect or uniform, then place these in the dish with the cashew cream.
  • Bake this in a 375 degree oven until the cauliflower is tender enough for a fork to go through easily. For my oven this is usually 20-25 minutes.
  • Remove from the oven and let cool completely before slicing into roughly 1/4 inch slices. Scoop up some of the cream and pour it over your slice before serving.
