PICKLED CAULIFLOWER

Perfect for wraps, sandwiches and tacos, these have a slight bite contrasting the cool Cauliflower.

Ingredients:

  • 3 cups cauliflower
  • 1 1/4 cups water (You may need more for filling the jar)
  • 1/2 cup rice wine vinegar
  • 1 tsp salt
  • 2 tsp sugar
  • 1 tbsp hot sauce
  • 1 tbsp soy sauce
  • 1/2 tsp smoked paprika

Directions:

  • Cut your cauliflower into bite sized pieces, think roughly the size you'd see them in a veggie platter. Add these to a mason jar or similar size Tupperware container.
  • Add all your remaining ingredients to the jar. You may need to add a little more water to ensure all of your cauliflower is submerged. Shake the jar or stir the container to ensure every thing is mixed well and refrigerate.
  •  This is best if let to sit overnight but can be used in as little as 2 hours.
