PANCAKES

Ingredients:

  • 2 1/2 cup flour
  • 5 tbsp sugar
  • 4 tsp baking powder
  • 1/2 tsp of salt
  • 2 3/4 cup oat milk
  • 3 tbsp melted butter
  • 1 tbsp vinegar
  • 1 tsp vanilla extract


 

Directions:

  • In a large bowl combine your flour, baking powder, and salt. Mix with a whisk until well combined. 
  • In a large bowl add the oat milk, melted butter, vinegar, sugar, and vanilla extract. Mix this with a whisk until well combined and cohesive. Your melted butter is going to seize up in the cold milk but this is okay, this will melt in the batter as the pancake cooks and make for a fluffier pancake.
  • Now pour the wet ingredients on top of the dry ingredients and mix until everything just comes together, essentially when all the flour is hydrated. Try not to over mix there will be lumps which is okay, you want to avoid building Gluten.
  • Heat a skillet or pan on medium heat and butter or oil the surface. 
  • Pour roughly 1/4 cup of batter into the pan and cook on one side until you can start to see bubbles appear on the edges. Check on the bottom and if it is golden brown flip to the other side. This is usually 1-2 minutes.
  • Cook on the other side for 1-2 minutes or until golden brown.
