onion oil

A great way to use scraps, while also making a delicious flavoring agent and cooking oil.

Ingredients:

  • 4 cups peanut or cooking oil
  • 4 packed cups of Onion and garlic scraps. options listed below.
  • Heavy pinch of salt
    Onion and garlic scraps that can be used:
  • Onion skins, garlic skins, onion ends, leek scraps and ends, scallion scraps, small garlic cloves that aren't worth peeling.
     

Directions:

  • Wash any of your scraps as needed to get off any dirt that may have stuck around. Make sure to shake off any excess water or dry everything off.
  • Place your oil, salt, and all of your scraps into a large pot and turn the heat to medium. Cook this until the oil starts to hard boil and bubble around your scraps.
  • Continue to cook at medium for one minute then reduce your heat to medium low and simmer for 15 more minutes.
  • Remove the pot from the heat and let cool completely.  Strain the oil into a lidded bowl or jar and place in the refrigerator.
