blueberry bread
Makes: One Loaf
Ingredients:
1 3/4 cup flour1/4 cup oatmeal1 tsp baking powder1 tsp baking sodaPinch of salt2 cups mashed blueberries1/3 cup oil2/3 cup sugar1 tbsp melted butter1/2 tbsp lemon juicezest of one lemonTopping:3 tbsp sugar3 tbsp oatmeal1 tbsp lemon juice
Directions:
Preheat your oven to 350 degrees.
Prepare a loaf pan, or similar sized cake pan by oiling the bottom and sides of the pan then dust with flour. Make sure to shake out the excess.
In a large bowl combine your flour, oatmeal, baking soda and powder, and salt. Mix with a whisk until well combined.In a large bowl mash your blueberries with a spoon, fork, or patotato masher until there are no large chunks left.
To your blueberries add the sugar, oil, lemon juice, zest, and melted butter. Mix this with a whisk until well combined.
Now pour the wet ingredients on top of the dry ingredients and mix until everything just comes together, essentially when all the flour is hydrated. Try not to over mix there will be lumps which is okay, you want to avoid building Gluten.
Pour your batter into your loaf pan. Now combine all ingredients for your topping in a bowl and mix well. Using a spoon or your fingers sprinkle the topping as evenly as you can accross the top.Place in the oven and bake until a toothpick inserted into the middle comes out clean, depending on your dish 45-50 minutes approximately.
Remove from the oven and let cool completely before trying to remove from the pan.
