BALSAMIC ONION SAUCE
A sweet, tangy, and vinegary sauce that goes on everything.
Ingredients:
4 medium onions (Any kind works)1 tbsp butter1/4 cup balsamic vinegar1 tbsp olive oil1 tsp liquid aminos2 cloves garlic1/4¼cup chivesSalt and pepper to taste
Directions:
Cut your onions into thin strips and place in a medium sized sauce pan with the butter. Cook on medium heat, stirring often at first, until the onions turn translucent.Leave your onions to cook stirring as little as possible until they start to pick up some heavy brown color, some cha is okay here. Once your onions are browned on at least one side reduce the heat to medium low and stir in all remaining ingredients (The garlic cloves can be left whole).Let this cook on low heat until the chives have wilted then turn off the heat and remove the pan. Let this cool until it is safe to handle and pour.Pour your sauce into a blender or food processor and puree until you have a smooth cohesive sauce. You may need to add water to get it to your desired consistency, but add it slowly usually 1-2 tbsp at a time. After you have your desired thickness, taste to determine if more salt and pepper is needed and if any is added blend again to mix.Serve and enjoy.
